WHERE ARE RICCADONNA SPARKLING WINES PRODUCED

Our unique sparkling wines

Our sparkling wines are born in the Prosecco and Langhe hills. Both are lands with a vocation for wine.

Veneto is a special area, with its alluvial soils, which benefits from a mild and gentle climate, ideal for producing extraordinary sparkling wines.

Piedmont has a long history of sparkling wine production: the soils of the Langhe are lovingly dedicated to the cultivation, particularly of vineyards, whose production of wines has made this land famous throughout the world.

Our Sparkling Wines and Prosecco production process

The Riccadonna sparkling wines range includes high quality-certified variants – Prosecco D.O.C., Asti D.O.C.G., Ruby, Chardonnay, Moscato Rosè and also the Prosecco D.O.C. Biologico Range – that are produced using specific techniques and taking specific timing to deliver their own unique taste experience.

HARVESTING

In September, grape are harvested, mostly by hand, only when they reach the right degree of ripening.

PRESSING

Cold pressing of the newly-harvested grapes ensures that flavour and aroma are preserved.

CLARIFICATION
& FILTRATION

Eliminates particles in the must and the presence of natural yeasts.

REFRIGERATION
& STORAGE

The must is kept under controlled conditions untile the assemblage, at a very low temperature (0°C) in ordere to prevent fermentation from starting.

FIRST FERMENTATION
& BLENDING

All sparkling wines start their life from a base wine. Pressurised stainless steel storage of the harvested must maintains the temperature stable for around 20 days. After the first fermentation there is the blending of different base wines to make the Cuvée.

SECOND FERMENTATION

Re-fermentation in stainless steel tanks (the “Charmat Method”) adds the final sparkling qualityto the wine.

DOSAGE

The dosage, addition of sugar, determinates the sweetness classification sush as Brut, Extra Dry, Sweet.

BOTTLING

Further filtering of the wine guarantees its purity and readiness to be dressed upin its exquisite bottle.
